1 cup yellow cornmeal<br />
1 cup all-purpose flour<br />

3 teaspoons baking powder<br />
1 cup milk<br />
1/4 cup oil<br />
1 egg, beaten<br />
1/2 cup crumbled feta cheese<br />
1/2 cup chopped fresh herbs (I used parsley, rosemary, and thyme)<br />

Preheat the oven to 400&deg; F.<br />

In a large bowl, whisk together the cornmeal, flour, sugar, salt, and baking powder. Add the milk, oil, and beaten egg and stir to combine. Don't overmix!<br />

Baking up a batch of granola is another great idea. It's significantly better than any prepackaged granola you'll find on grocery store shelves and easy to make a large quantity of. Fill up small canning jars with your favorite recipe. Guests can sprinkle it on their morning yogurt or simply eat it straight out of the jar on their ride home. <br />

It signals the end of the holiday season and even though you may be completely exhausted from party overload, it's a bit sad to see all the fun die down. Beginning with choosing teams for third-grade Dodgeball to food blog memes, I&rsquo;m accustomed to being the last one picked. But then I get tagged twice in one week! Along came my new gal-pal Meg, from Too Many Chefs, who snagged me for the cookbook meme that&rsquo;s been going &rsquo;round <a style="color: #313431; text-decoration: none;" href="http://www.health-natural-food.com/probiotic_powder.html">Probiotic powder</a>.<br />
Here goes&hellip;.<br />

1. Total number of cookbooks I&rsquo;ve owned:<br />
Well, er, when I moved out of San Francisco, I packed them all in boxes for storage, and there are about 18 per box. And, um, there were about 30 boxes, so that would make around 540. And that number was considerably higher before I sold a few off prior to the &lsquo;big move&rsquo;. In my petit Paris apartment, I have about 35 cookbooks.<br />
<br />
2. Last cookbook I bought:<br />
Fine Chocolates, Great Experience by Jean-Pierre Wybauw.<br />
Jean-Pierre was my teacher in Belgium when I went to chocolate school at Callebaut and he&rsquo;s one of the great talents in the world of chocolate. He worked deftly (and never got a drop of chocolate on him&hellip;ever) and was so patient with all his students. His book explains much about chocolate including how to make chocolates, enrobing them, and extensive information about the fabrication of chocolate <a style="color: #313431; text-decoration: none;" href="http://pontigrandcru.com.hk/yf/port-wine.html">Burgundy wine</a>. Much of it is geared towards professionals, who are distraught, since many are having a hard time finding this book in the United States.<br />
<br />
3. Last food book I read:<br />
On Food and Cooking: The Science and Lore of the Kitchen by Harold McGee. Harold spent 10 years updating his original book (which no one initially wanted to publish&hellip;but eventually went into 17 printings!) This book answers every question you could have about food and cooking. Every cook should have a copy of this revised edition in their library. I read it cover-to-cover.<br />

Chez Panisse Desserts by Lindsey Shere<br />
Naturally, I&rsquo;ve made more desserts from this book than any other and my kudos were echoed by Claudia Fleming, who I considered the best pastry chef in the US while she was at Grammery Tavern in New York. She told me it was her favorite dessert book of all time.<br />
<br />
From Tapas to Meze by Joanne Weir<br />
This is one book that I cook from often. The Feta-Cucumber Salad is the greatest recipe, in my humble opinion, although there&rsquo;s lots to choose from. I love serving all the salads and vegetables and small-dishes from the regions represented: Spain, Italy, Morocco, Lebanon, and more <a style="color: #313431; text-decoration: none;" href="http://pontigrandcru.com.hk/yf/lafite-rothschild.html">lafite rothschild</a>.<br />

French Farmhouse Cookbook by Susan Loomis<br />
Since moving to France, this cookbook helped immensely with the transition, as I learned about French ingredients and the way food is prepared here. Interspersed are informative stories about food production across France, as well as easy-to-follow recipes from farmhouses across the countryside, where the best traditional cooking is found.<br />

Chocolate and the Art of Low-Fat Desserts by Alice Medrich<br />
Stop snickering. Just because the desserts are low-fat, doesn&rsquo;t mean they aren&rsquo;t fabulous. Nobody but Alice Medrich, the chocolate-guru, could create such amazing chocolate-rich desserts with reduced amount of butter and cream but no icky ingredients. It was here I learned when you adjust the amount of fat in desserts, you let the other flavors shine through. Everything I&rsquo;ve made from this book, all these desserts, are winners, and not just the chocolate ones. The Chocolate Buttermilk Pound Cake is moist and has rich-tasting chocolate flavor and texture, and the Apricot Vermouth Cake is exceptional too. And that lofty Chocolate Souffle!<br />
<br />
The Zuni Cookbook by Judy Rodgers<br />
Someday I will get around to making the justly-famous Zuni Roast Chicken with Bread Salad, but I have made many other things from this book with grand success. Judy has the rare ability to explain something like it&rsquo;s never been explained before, sans the fluff. Her instructions for salt-brining have changed the way I cook; I&rsquo;ve learned so much about food and cooking just leafing through this book. When Judy worked at Chez Panisse, she made me the best thing I ever ate in my life. And you gotta love a book that starts off the dessert chapter with&hellip; &ldquo;Dessert has the interesting duty of teasing out the last gasps of your appetite.&rdquo;<br />

Last year I wrote about my visit to a Parmigiano cheese maker and about Parmigiano Reggiano Night. This year, Parmigiano Reggiano Night is happening again. As you may recall, the idea of the global dinner party is is to pick some recipes, invite your friends over, cook, eat, and then share photos of your feast if you're so inclined. In the past there have been some very avant garde recipes made available, such as a broth made from the rind of the cheese, and risotto cacao e pepe, but you can make whatever you like as long as it includes Parmigiano Reggiano. There's a video about it from last year when it was celebrated at Eataly in NYC.<br />

Parmigiano Reggiano is a cheese I fear sometimes gets taken for granted. When I was at Eataly in New York last week I saw a great selection of the cheese, including one of my favorites vacche rosse and some aged 30 months. It seems that every year around holiday time, I try to make some variation of pecan pie. It has long been one of my favorite desserts, and I enjoy finding ways to keep it new. The idea for this year&rsquo;s little twist just kinda hit me one day. I&rsquo;m no stranger to baking with pecans or brown butter. You&rsquo;ll find those two showing up quite a bit around here. But, I&rsquo;m not sure they&rsquo;ve shown up in the same recipe.<br />

I took my family&rsquo;s traditional pecan pie recipe, made a couple of changes, browned some butter, and here we are with this pie. It&rsquo;s still pecan pie, but it&rsquo;s so much more. Granted, I may change my mind with whatever version of pecan pie I bake next, but I feel confident that this is my favorite pecan pie. Ever. Quinn agrees, too. You think, it would be fun to live with a lady obsessed with baking. Gorging on desserts, cakes n cookies all the time, well yes it does have its advantages, but the downside is , everyone around me is piling on the pounds and I have been given the red alert from my family, to not bake ( for a while at least). For the past two days I&rsquo;ve been fantasising about making doughnuts, cinnamon n sugar doughnuts, doughnuts filled with custard, chocolate doughnuts, plain doughnuts with frosting &hellip; and the works. As I announced my nobel plan, everyone screamt in one voice &ndash; Don&rsquo;t even think about it ! We&rsquo;re all getting fat. You make you eat it all. Uh &ndash; Oh ! Now that doesn&rsquo;t work for me either. So having suppressed my urges to make doughnuts, I asked, atleast let me make some simple chocolates. You all need a tiny bite after every meal : And I need to make something sweet ! To my relief that was reluctantly accepted. So I kept it simple and basic, and made a tiny batch of plain toasted hazelnut and dark chocolate clusters. Those were a big hit <a style="color: #313431; text-decoration: none;" href="http://www.citictel-cpc.com/EN/HK/Pages/product-services/smartcloud-eps">End Point Backup</a>. Got over the next day. Inspired by the easy acceptance and consumption I dared to take it a step further.<br />

This time, I thought let me not announce and ask, rather just make some and see how it goes. Now almonds, chocolate and sugar is something thats always sitting around the kitchen. Put together, its sure to make a wondrous treat. Roasted Salted Almonds coated in Caramel and then dipped in dark chocolate &hellip; hmmm, hard to resist. Actually I wasn&rsquo;t planning a blog post with these, but as I got into making them, it looked so wonderful, I had to run for my camera and capture this to share with you. Simple as it may seem, look and be, its every bit fancy, decadent and delicious.<br />
<br />
I started with toasting 250 gms of Almonds in a preheated oven at 180C for about 15 mins. I sprinkled about 2-3 pinches of salt on the almonds and tossed them and set them to cool. In a heavy based saucepan on medium fire <a style="color: #313431; text-decoration: none;" href="http://www.mandyvincent.com/2015/08/MathConceptCourses-Understanding.html">mathconcept</a>, I took 1 cup of sugar. I let the sugar melt , turn light brown and come to a boil. Before the sugar started turning a darker shade, I turned off the heat, put a tablespoon of butter and about 3-4 tablespoons of thick cream. The mixture bubbled up, and I gave it a good stir making sure the caramel sauce was homogenised. The caramel sauce was ready.<br />

Now I tossed all the roasted almonds along with the salt in the caramel, coating them evenly, and spread them out on a silicon mat. Chucked it in the fridge for 5 minutes. In the meantime, I melted about 375 gms of dark chocolate in the microwave. Once the almonds were set, I chopped them up, and tossed them all in the chocolate, mixing them very well and making sure all the nuts were coated evenly.<br />
<br />
Mini cupcake liners make the best holders for these little babies. Spoon a little in each or as much as you like. To set them, return to the fridge for 5 mins and then pack them in a air tight container, in the fridge. These do tend to get soft if left out at room temperature for too long, but then again its 38C here, which is insanely hot, so I&rsquo;ve stored mine in a airtight container in the fridge. You may not have to if its cooler where you are. Making these took barely any time at all, and while these were being spooned in, my little brat was feasting on them, which only meant one thing.
